Resumen:
The synthesis of 5-hydroxymethylfurfural (HMF) using green chemistry
conditions is presented, which is obtained through the dehydration
reaction of fructose using an acid catalyst and a phase transfer
catalyst. Different reactions were carried out, in which the effect of
reaction time, type and amount of phase transfer catalyst were studied,
maintaining a controlled temperature in a range of 96-100 oC. The HMF
was purified by column chromatography using an elution gradient.
Finally, it was characterized by its spectroscopic properties. The
purpose of this work is to implement a new practice in the laboratory of
Organic Chemistry III (code 1628), which focuses mainly on the synthesis
of heterocyclic compounds oriented to the career of Food Chemistry, the
Faculty of Chemistry of the National Autonomous University of Mexico
(UNAM).
